Its going to be critical to know what precisely is meant by "oil infrastructure". If they are just blowing up fuel depots, that is standard military stuff. Iran can't use its mobile launchers if they don't have any gas.
If they are blowing up the refinery stacks and pumping stations, that is something else entirely. Those are far harder to replace then a storage depot and would lead to far longer lasting impacts.
Besides depriving them of oil sales, this will eventually starve them of fuel to use in their own vehicles and weapons.

Exactly this. Blowing up fuel depots is just to pressure the regime and make it so they can't move their own military around. Its is like cutting someone's hair, it will grow back without too much fuss. A relative blip in Iran's recovery.
If they hit refineries, fields, and pumping stations that is much more serious and will really slow down recovery of oil and Iran's enconomy.

Yes and no.
You're correct that intervention by China or Russia would massively change the game. However:
1) Neither Russia nor China will go to bat for Iran. Iran and those countries are in at best a situationship. US/Russia/China (and Israel, lets be honest with ourselves) are nuclear armed. For about the same reason you don't see NATO troops raining death and destruction down on Russian troops in Ukraine, neither Russia nor China will militarily interfere now that shit is Happening.
2) Even if we forget point 1, neither country is ready to contribute forces to Iran in any meaningful capacity, especially given the Eternal Jew and the Constant Yank control the skies. Any attempt to move a battalion or division would be encouraged to go back, and their "safety couldn't be guarranteed" - meaning if they die being bombed in Iran, they die and it wouldn't be an act of war. If they tried to set up air defense, that air defense would be blasted to oblivion the minute it locked on a US/IDAF aircraft.
3a) China wants oil shipments resumed ASAP. Sending forces to support the regime against the US/IDF bombing would be counter to that goal.
3b) Russia has demonstrated that its expeditionary force projection is MASSIVELY degraded, being unable to prevent the downfall of its long time ally Syria and its global trade partner in evading western sanctions Venezuela. This is very likely the result of their 4 year long war in Ukraine. Even if they had the will and the logistics, they very likely are incapable of supporting Iran via ground forces.

Regime change won't happen without boots on the ground. The attempts to improvise a kurdish uprising have fallen through. A full on invasion would be madness and would have to be prepared for months. A more limited goal like capturing strategic islands or very specific parts of Irans coastline might be doable in a few days.
Months? try years. The US military would need to double in size to say nothing of the equipment needed.
