Made myself a pizza with pepperoni, olives and red onion! Nothing beats kneading pizza dough


Got a pizza ready to go tonight. I've not eaten all day. Skipped every meal coz I was busy. It's not really fasting as such, but I'm ok to do that sometimes. A pizza at the end of it all is my little way of rewarding myself.

You talk about onion! Mmmm, I got an 1/8th of one still left in the fridge and I was wondering if it might work chopped up very finely. I already chopped up a very small clove of Garlic. Also some yellow pepper in thin streaks. A little bit of Halloumi and a lit bit of Red Leicester. Best bit is going to be the Jalapeno peppers I put on it. These little bastards are quite hot. I think they're approaching the sort of 10K of the Scoville Unit scale. Don't know. Don't overdo it with these anyway. Just a few slices on top. Cooking milds them down and takes the heat off.

I don't eat meat, though I sometimes eat fish. I've been known to put a tin of Mackerel on top of a Pizza before, and it mixes up quite good. I tend to prefer a mix of more neutral stuff. Oh yeah, got a couple of nice sliced mushrooms to put on top as well.

I only eat pizza maybe once a fortnight. I get the base from the local shop and it's only about a quid. It's not as good as the one they used to do, but it's ok. They changed it out for a real shitty one and they didn't sell. I tried one and it was fucking disgusting. They didn't get away with that. This one is not bad.

Best fucking pizza I ever had was in Brussels and it was a Quattro Formaggi - https://en.wikipedia.org/wiki/Pizza_quattro_formaggi - basically a four cheese pizza. Very very thin base. Kind of crispy. We could have eaten anything that night, but once I ordered that and people tasted it, there was no going back. With some nice wines and beers of course, because, Brussels...

I got enough going on on mine. A little bit of Stilton or Dolcelatte or Castellano in a very small amount might finish it off perfectly. But I'm good. If I want a 4 cheese pizza I'll just stick to that. Sometimes you can over do it.

Halloumi cheese btw is one of the unsung toppings of pizza. Slice it thin and fine. It won't even crisp up. Not the way it does when you cook it in a pan. So it's always got that slightly rubbery and substantial feel to it. I wouldn't be averse to it being pre-cooked before hand. It's got that salty kind of texture that bacon has. And as a veggie myself, it's the next best thing to a bacon sarnie you can get. Brown sauce on top, of course.

I recently run out of the the boutique olives my mum gave me xmas time. 2 jars. Stuffed with nuts and all kinds of shit. Lovely. Big green juicy olives. And I sliced them up and put them on as a topping too, before they ran out.

Olives, like Anchovy are an acquired taste. You never want to overdo that. But sometimes, if you have little other ingredients, they can really spice up an otherwise mediocre pizza.

The other night, I was down on my luck. I had little left in my food cupboard. But I had one of thoze cheap pizzas. And all I had was a bit of extra cheese and mushrooms and jalapeno to put on top of it. It was superb. Enjoy every sandwich.


One day, I'll get in to the whole kneading thing and making my own dough. But that's enough for now. Pizza isn't something I think should be eaten once a week or even once a fortnight. Maybe once a month, and then knock yourself out and fill your fucking boots!

And just like my little trip to Brussels, the breaking of bread with fellow travellers, all washed down with local, exotic beers, is the best.

I'm still very much undecided though as to whether I want to chance putting that 1/8th of onion on top, finely chopped or not.

I guess sometimes it pays to live dangerously. But there's no shame in being a boring stick-in-the-mud either.

Boiled pasta... big deal. So my step mom LOVES lobster and costco had great maine lobster ravs, on sale. So I rolled to folks for unrelated stuff and smuggled some of the lobster ravs.

4 mins all it needed tasted really good if you enjoy lobster (its eh for me but I understand difference from "lobster" to maine ones.

For a few bucks cooked my folks a great dinner thats "fancy" with 0 effort. Just made me happy. To me part of my I like cooking, I really made people happy.
 
Made some overnight oats with peanut butter and some vanilla and had fresh strawberries on top for breakfast/lunch. For dinner I'm making some home made tomato soup and whole grain grilled cheese :ratface: very creamy!
 
It's fish, Mac and cheese, and spinach salad for dinner tomorrow. I got myself salmon and my wife haddock because I can't stand white fish and she can't stand salmon. I'm gonna do a little butter and herb crust on top of the haddock, and my minced garlic, olive oil and dill on the salmon. The nice thing is that usually we have leftovers with fish, and with the sides we're having, I doubt I'll have to cook the next night.

Tonight, however, is frozen pizza, chicken wings, and mozzarella sticks. I'm much to exhausted today to do anything cooking or cleaning related.

I made this for the consumption of the opossums at the wildlife clinic and not for humans, but it looked so much like an overpriced menu item at a healthy hipster restaurant I had to take a photo.

I love making overnight oats! I had some for breakfast this morning, my favorite combo is sliced dates and a spoonfuls of peanut butter .
 
Probably going to make egg fried rice tommorow with some leftovers from my rice cooker tonight. Should I just go hyperbasic with some soy sauce, a pinch of sugar, scallions, and white pepper? My ‘tism is pushing me so close to getting a wok and some nutty-ass outdoor burner.
 
Cooked some bulgur with tomato, bell peppers, spinach, feta and a bunch of spices in the rice cooker. Turned out pretty delicious.

I will continue to use my rice cooker for stuff like that from now on. :lol:

I have a wok, and it made a big difference for me when making a big batch of fried rice in one instead of a regular pan. They get really hot real quick, and the high domed walls really help to keep everything inside the pan when stir frying. I'd definitely recommend one for the next time you make fried rice!
 
Just buying a whole chicken is the one bargain left, and I suck at cutting them up despite watching numerous videos where some wizard cuts them up in a minute. Even though I'm not very good at it this might be the excuse I need finally to get an actual knife worthy of the name.
It's just my opinion, but you don't need a sharp knife for chicken unless you are de-boning them. Feel out the joints, go through, skin and meat is fragile as it is to there won't be any resistance and the ribs could be cut through by a spoon. I guess you can flip the knife and use the dull side to press down feel out the joints before the cut.

Personally I have been making kebabs because a kilo of it was on sale and as it turns out that goes a long way. First time ever buying it for home use.
So far my procedure is: toasting the bread, cutting it open, throw mozarela in there, back in the owen and let it melt. Then out, in with the meat, cucumber sticks(important), tomato, onion and then my homemade sauce. The sauce is not good enough to share the recipe of. It's pretty good though, it is shaping up.
 
In hindsight i probably should have taken the eggs out of the pan, though cast iron was probably the right call considering my lack of a wok.
Anyone have a recommendation on what style of wok to go with by the way? Flat bottom or round with some kind of ring or burner grate?

a can of PBR from like, a year or two ago that I found while cleaning the other week, chilled and took a slug to make sure it wasn't toxic

a teaspoon of that hispanic tomato/chicken bullion powder
a mess of fresh ground pepper
a couple of bay leaves
into the instapot timered to 20min

probably the least amount of liquid I've tried in the instapot to date, def going to start dialing back my liquid use
 
Today I made mo and decided to be extra by using them as burger buns.

They were light and fluffy, but they held up well to the burger. Though I think they'd be pretty bomb with just some butter.

Served with tater tots because America

Had some tomatos that were going bad so I sliced them and threw them in a small pot with some oil. Cooked them down and added some broth with better than bouillon, garlic salt and sage. Added some spinach and mushooms. Didn't let them super cook down for some texture before adding some some egg noodles to the mix and mixing. So, so refreshing and delicious. Garnish with some sardines or cheese. Just something salty in general.
 
Sushi...kind of. I don't want to fuck around with supermarket raw fish so I cook some white fish (or prawns if I have them), shred it up, mix with mayo and sriracha and use that as the filling for the sushi rolls. Add whatever I have on hand as extra filling, avocado today other times omelette or some green onions.

I don't know if this is a thing that has a name or if I'm just a tard jamming random ingredients into sushi rolls. Comes out pretty tasty though.
