It actually wasn't. You're right though, bison for slow cooking is probably the way to go. Bison Meat Shepard's Pie is the shit.
bison meat chili is really really good too. I have a permanant chili recipe ive been working on for a few years,.. gotta brown the meat and then it all goes into a crockpot to cook while you are at work...
NOTAFED's Midwestern Chili (Mild Version)

2 pounds ground Bison (brown and drain) with 1 tablespoon minced garlic
1 - 46 ounce bottle of vegetable juice (v8

1 - 28 ounce can diced tomatoes (undrained)
1 each chopped yellow, orange and green pepper
1 1/2 cup chopped onion... (about 1 medium onion, no need to be exact)
1 1/2 cup chopped celery
1 can red beans, drained
1 can mixed chili beans (undrained)
1/3 cup chili powder
1/4 cup yellow corn meal
1 tablespoon cumin
2 teaspoon dark brown sugar
2 teaspoon smoked paprika
1 1/2 teaspoon mexican oregano
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon msg
Add all ingredients (including browned meat) to a cuisinart multicooker or large crockpot, they will fit! (add vegetable juice last).
Bring to a boil on the cook setting (350 degrees) then turn down to low and cook a minimum of 6 hrs
stiring very occasionally
Goes good with cornbread.
note: I usually will separately add some additional blistered chilis to my bowl but this one is made so the kids can eat it too
