Rather than typical hot sauces I like stuff like chili chutney, chili marmalades, chili oil, that kind of stuff. It's either more fruity or more savory rather than an all-out assault on your tastebuds with heat and acidity.

I've made Bobby Flay's North Carolina BBQ twice and it was good with ribs and chicken. He has quite a few hot sauce recipes so will probably try making some others in the near future.

I've been trying for years to make a good vinegar based sauce but I can never get it quite right.Carolina vinegar style BBQ sauce may be my gateway to hot sauces as I experimented with a bunch of recipes this past summer and really enjoyed one that was heavier on the apple cider vinegar and gave me a taste for something more than garlic+vinegar+mild-moderate heat.
