So this is my take on the demo and little details I noticed that haven't been brought up yet.
The battle menu has been drastically changed and is far more informative than in previous games. People who feel that the difficulty of the games has been nerfed in recent generations probably won't like these changes, but nothing they give you is stuff you couldn't keep track of on your own.
The big change is that after you encounter a pokemon for the first time, the game tells you how effective your moves will be against it. What I haven't seen mentioned however, is that you can tap the pokemon sprites on the touch screen and get additional information. This will not only let you know the typing of the pokemon you're battling (not available on the first encounter) but will also allow you to see any buffs or debuffs the pokemon has. So if you like to use status moves you can keep track of these much easier than before.
From this same screen, I was also able to check the abilities of Greninja and Pikachu and see what they do. I was not able to do this with any of the pokemon I was fighting (there is a trainer you can fight in the second part of the demo who has a Pikachu, I forgot to check if I could see that Pikachu's ability so if anyone can check that would be great). If you're able to check the opponent's ability in battle after catching it, that's not only going to make hunting for pokemon with certain abilities easier but will also make battling human opponents interesting.
There is also going to be additional stuff you can do after a certain amount of time has passed since downloading the demo. Assuming you download the demo today, these are the days something new will be available:
October 19 (1 Day after Downloading)
October 23 (5 Days after Downloading)
October 30 (12 Days after Downloading)
November 5 (18 Days after Downloading)
November 11 (24 Days after Downloading)
Once the game releases, you can go to the Pokemon Center and talk to Kukui and transfer over several things with the Pokemon Link. So far you can transfer Ash-Greninja, a nugget, a star piece, and some stardust. If you play the demo tomorrow, you'll be able to get 10 pretty wings.
Serebii should be updating this page as more things become available.
