There were tons of S and E models produced that never had any sort of widespread failure, and are objectively better than the older ones. They'll never get super valuable, unless you've got a limited edition. Like that Simpsons one, where only 100 were produced:Who knows maybe in the future the 360 will be a rare collectors console due to the early models not being reliable.
Of course in general the optical drive based consoles have their disk drive as a point of failure, that killed my PS2 slim back then. (That, and playing too much Budokai Tenkaichi 3.)
Not to mention the 20-30 years lag of nostalgia will be always at play.
Before the pandemic, the 4GB models would go for as cheap as $60 at GameStop. When consoles get that cheap, it's worth just getting an extra one as a spare, since they're likely gonna sit there for a few years and then start crawling back up in value as people who grew up with one hit college age and start rebuilding their childhood library.
We're probably not gonna see 360s that cheap ever again, but PS4s and Xbox Ones will be in a few years, after the PS5s and Series hit their strides.
