Lazy and made some ramen. Dropped in an egg and a slice of American cheese towards the end, and gave it a dusting of Parmesan when it was done. Also added some truffle hot sauce. Not bad.

Made some braised beef short ribs in the dutch oven. Shredded the meat after a couple of hours and served it over buttered noodles. Simple and delicious, but definitely one of those once in a while meals because of how insanely pricey all cuts of beef have become.

I have a simple but delicious recipe for instant pot short ribs (will include below), which I've only made a few times when my grocery store has the boneless ones on heavy discount, but even then they aren't cheap.

Lightly season 1 package (1.5-2lbs) boneless beef short ribs (salt/pepper/garlic/onion as you prefer)
Set Instant Pot to saute, add oil, sear ribs couple minutes each, remove

Saute 6 cloves or 3 teaspoons minced garlic for 30 seconds. Onions/carrots as well if you prefer.
Add 1/2 cup red wine to deglaze pan (scrape bottom with wooden spoon)
Add 1 Tbsp soy sauce, 1 Tbsp fish sauce or Worcestershire, 1-1.5 Tbsp brown sugar, 2 Tbsp balsamic vinegar
Add 1/2 cup unsalted chicken stock

Pressure cook for 45min + 15min pressure release

Optional: put 3-4 peeled, halved potatoes in bowl on top of ribs
Mash potatoes with ~4oz milk, 1-2 Tbsp butter
Also goes great over rice, noodles, etc.

I like mine with mashed potatoes but I totally feel this.
 
Chili.

I usually just make a Mole sauce (Guajillo and Morita peppers). Toast some peppers, throw them in some stock, add garlic, add an onion, sometimes briefly sear a tomato and add it, and then blend that after it’s seared.

I usually actually do hot Italian sausage or Mergeuz sausage along with ground beef. I feel like having that extra bit of variety really makes it good. Then I do the onion and garlic. Typically I add oregano and cumin. On occasion I will add some powdered ancho or Hungarian smoked paprika if I am doing it only for me. Then I add back the meat once the spices have toasted a bit.

I add the mole sauce here and usually I strain it. I’ll add some of the pulpy bit to make it a bit thicker (usually has some more heat in it too). I’ll usually add some chicken stock here as well. Then I add kidney beans, bring it up to a simmer, let it reduce, and skim.

It’s basically my chile Colorado recipe, but rather than braising beef.
 
Drinking Hibiscus Tea today :lol:, i wish there wasnt always gritty shit at the bottom of the kettle, i like my tea to the last drop
 
Made patty melts, followed the guga video, theyre so nice. I might and may allah forgive me for saying this but might think i prefer them to burgers. Made a batch of the beef mixture up so I'll just stick the bread in the toaster instead of doing the cool spread mayo then fry schtick (it is good for making cheese on toast tho)

Can you not get filters for that? My granny used to have one on her kettle for the tea, one of the old ones you'd have to put on the hob. The whistle went off went it started boiling.
 
Guess im buying some cheese cloth, coffee filters and the like have plastic stuff that impacts flavor iirc
I might have been talking shite actually, don't think old kettles had some complex sieve system inside them. I'm too used to builder's brews now, not unless you can hibiscus in bags?

You can make decent bechamel in the microwave if you can't be bothered to use the stove.

Bechamels the easiest thing ever lol its only a couple of minutes, you could probably make it in the time the bread is toasting.
