Ascension WoW held my interest for a while. Drain-tanking the custom dungeons was pretty fun.
Hellgate London has a working private server. No new updates, but it actually works unlike the Steam version.
Valor (Realm of the Mad God) is populated, but is currently undergoing changes as the dev's backup failed and everything rolled back eight months. He says he's moving ahead with the overhaul faster due to it. Overall fun server and balanced custom content. Surprisingly decent netcode for the game, too.

Battlefield 2 (the best game in the series) is still somewhat decently populated for a 20 year old game even during weekdays. Granted you're going to be playing with a lot of turd worlders who have dial-up speed connections but you can find full 32v32 servers.

I also used to play Halo Custom Edition and I wouldn't be surprised if customs for that are still populated considering how shit MCC is.

I tried hosting my own Lich King server once to see how I could make custom content to fuck around with the world and have a fun surprise for friends, but god DAMN is that shit a mess. It's a miracle people manage to make stuff like full on custom dungeons or custom spells with the tools they have because even small stuff like NPCs, quests or items is ass and requires like 4 different software.
 
Interesting thread, although not much content so far.
I think OP means MMOs but due to my experience hosting server for friends I'm going to touch on general private servers you can either self-host or some currently on-line private server for non-MMO games you can readily play today.
Check if your ISP let's you open ports, you'll also likely want to learn how to navigate and run programs on Linux, I'm not going to do a tutorial on this, but if you want a small, simple and useful serer to have, run yourself a mednafen-server.
A server is nothing other than a regular computer, there is no secret to it aside from 1, CPU architecture, if you plan on hosting game servers you most likely want a amd64(x86-64) CPU, as server executables only run on those ones. Most computers use those, the pi5 also does, but older raspberry-pis don't, they use arm based CPUs, so keep an eye out!
Take your time to create dockers, not only so you have a better time in case you want to move servers, but also to share with others :)
