I saw some on the thread mentioning the Animated Series. AFAIK Roddenberry was heavily involved in the series, but looked back on it ten years later and decided it sucked so it wasn't "canon" but after he died, the franchise would slip in references here and there, and then Enterprise "canonized" several elements with episodes centering around plots and areas in the Animated Series. The Kzinti cat aliens were even going to appear in Enterprise's cancelled fifth season (the guy behind the episode had pitched their return for TNG, Ds9 and Voyager until finally getting luck with Enterprise only for the series to be prematurely cancelled before he could do the episode).
iirc in the TOS Remastered with the CG efffects they threw some little stuff in too, like the BRAIN AND BRAIN WHAT IS BRAIN girl's spaceship was revamped to match the whatever drive engine ship that shows up in TAS.

A number of episodes of the remastered TOS have TAS references included, such as "The Ultimate Computer". TAS is pretty popular with a section of the fandom, thus it even gets references in the Abrams Trek films.

There's also been various attempts to do new animated series. One in the early 90s that would have beene a crossover of TOS and TNG, one in the mid 2000s that would take place after TNG/DS9/VOY and one more recently that would be in the Abramsverse. And Armin Shimerman claims MTV was very close to greenlighting a Dariaesque series involving Quark and Rom as teenagers. Seriously..
To each their own. I couldn't stand the Ferengi episodes in any of the series. I guess they were popular, as even Enterprise had one, even though it takes place centuries before humans are supposed to have met the Ferengi.
There are some Ferengi episodes I really like, but I feel like there are a little too many Ferengi eps, also even though I like the Dax character, and I like her story line with Worf, I never found the plots about trill society that interesting.
So DS9 has been a real surprise so far. I got really into it much faster than TNG. I'm surprised I like all of the cast. Even the Bashir who I thought I would fucking hate is really cool. DS9 handled Trill a lot better than that one TNG episode too. It also got really good right away. In The Hands of the Prophets was fucking amazing, holy shit. Mixture of religion and politics that could be related right back to reality was super great, especially that conversation Sisko had with Jake. Man and then right after that, the fucking 3-part episode about The Circle on Bajor. Shit feels like I'm being spoiled after enduring Season 1 and 2 of TNG. Biggest surprise for me right now honestly is the fact that O'Brien is actually really great. I thought he had a lot of potential for being a great character after The Wounded. It was really smart of them to drop him into a show where Cardassian-Bajoran conflict seems to be the main focus so far. Makes episodes like Cardassian all the more sweet when he bonds with Rugal. Also surprising is that Jake is a really sweet kid who isn't at all like Wesley and I haven't wanted to strangle him for even a moment. Sisko and son are a pretty cool pair.

One of the big strengths of DS9, IMO, is how the cast played off one another. It felt organic. Even when they transferred Worf onto the crew, it felt seamless. I think that's part of what makes it my favorite Trek.
I liked Jadzia Dax and her romance with Worf - and just Jadzia in general.
Then Ezri came along and God she fell so flat I fucking hated her. They killed one great character and replaced her with someone who'd never live up to her legacy. They should've just gone with a whole new character rather than a Dax.
I started watching DS9 anyways because TNG was wearing me out a bit. First episode was really good. Expected it to take after Chain of Command, but instead they reeled it back to Best of Both Worlds from the view of Sisko. Was pretty great, got me feeling for Sisko right off the bat. Connected with Sisko faster than I did with Picard which was kind of surprising. Heard that Season 1 was slow, but 4 episodes in and I'm pretty into it. Cast is pretty interesting too. Got a shapeshifter, Trill, Ferengi, Bajoran. Lots of potential fun. I thought a Trek set on a space station would be pretty boring too, but surprisingly it's not that bad.
Also Chief O'Brien getting more spotlight is pretty great. I liked him a decent amount in TNG even though he never really got a chance to shine. Hopefully he does shine in DS9.

Interesting that you like the beginning of DS9. Most I've introduced to DS9 tell me they find the majority of the first two or three seasons to be really boring.

My boyfriend also hates Keiko so I read him this comment and he thought it was pretty funny. He is literally half asian, half Irish and rolls his eyes every time they have dumb arguments like if they should make egg rolls or corned beef for dinner.

I feel the opposite. Jadzia seemed too perfect of a character, like I can't really think of any flaws she had. She's smart, extremely beautiful, funny, wise, everyone loves her/is in love with her, she's physically strong, she's an honorary Klingon, etc. etc... I liked Ezri because she seemed more relatable & it was really cute that she became friends with Worf.
What will be extremely annoying is that certain people will be calling things that have been in Star Trek for decades (minority representation, high-ranking female officers, touching on racism/sexism/homophobia and such) "SJW bullshit".
One of the new characters is probably going to be muslim, if we're lucky they'll give her a headscarf and the salt will never stop flowing.
It will be like when they made Thor a woman and everyone flipped out except the people who were actually fans of the series and know that's just a thing they do sometimes.
Star Trek has always been about over-the-top diversity. They even had a polyamorous character in Enterprise lmao.
I rewatched Encounter at Farpoint last night, but I was pretty drunk so I don't have much of an opinion on it other than the aspect ratio seemed really weird.

The only time I sympathized with Keiko was when she clashed with Kai Wynn over what should be taught in school regarding the wormhole aliens. It's weird how DS9 seems more contemporary than ever in so many ways.
