I haven't been seriously into the genre in a few years, but my favourite was a heavily focused fork of Angband called Sil. I say focused, rather than simplified because the mechanics that are there are more strategically significant and fleshed out, even if the game's much less complicated than Angband to play. There's a great variety of potential character builds and strategies to try out and you're rewarded for knowing a bit of the lore. Basically if Tolkien didn't write about it it's not in the game (slime moulds excluded); magic is in the form of chanting songs of power rather than slinging fireballs and races function more as difficulty levels with Elves at the top, naturally. It's very faithful and a real joy to play as a Silmarillion fan.
