Darkest Dungeon: don't know if you're into the gothic horror aesthetic but while it's sadistic it's easy to learn.

Steins;gate elite: if you liked the anime, they animated the entire VN. So now it's an anime you can interact with.

Tetris 99 is a decent time waster.

Mario Kart.

Game Dev Story was pretty interesting. You play as a game dev and you try to come up with best sellers.

I think the switch version is glitchy for this and many carts were defective, I wound up getting the PS4 version.

World's End Syndrome and Raging Loop had no issues on the switch though.

Yikes, those are some insanely casual games. I can't believe you actually paid money for Pokemon on Switch.

But I have one that might be fun, in a different sort of way, as it's very short to play and you can try infinitely (and die a lot).

Death Road to Canada.

A SNES kind of game where you comedically survive to the last safehaven during a Zombie apocalypse: Canada.

The best part about the game is you can make yourself or literally ANYONE you can think of, giving them unique personality traits and skills that affect gameplay, especially with who you pair up with. And it's super easy co-op when a friend plays with you on Switch. It's fun, short, with varying levels of challenge too.
Since I know you like to make your friend on Animal Crossing, this could be a fun venture to try with your friends too. Branch out, as you said you wanted.

Port of Azure Striker Gunvolt 1&2, originally released on 3DS. It's a pretty good port, but having to switch from the special abilities having icons on the touch screen to having them bound to either Up, Down, Left, or Right on the Right Joystick was definitely a downgrade. It's an action platformer made by Inti Creates (who previously worked on the Mega Man Zero series), has some good music (that you'll probably never hear unless you look them up on YouTube because all of the good songs trigger once you reach a certain amount of points without getting hit), and a pretty good story. The sequel has two playable characters, each with different playstyles and seperate stories (though they cross paths more than a few times). You'll definitely have to look up how to get the true ending on the first one, but for the second one you just beat the final level with each character, and any time you play the final level after that it'll give you the full ending (both characters get the "same" ending, but you see it from their perspective.) There's an extra scene at the end if you complete 80% of challenges with both characters, and there's a ton of drama CDs that flesh out the story more - I think they've all been put on YouTube with english subs by now. There's a Spinoff called "Luminous Avenger iX" also on the Switch and it's great, but I recommend not touching it until you beat the two mainline games so that you can get the full impact of the story.

a cool 2D shooter where you jump from planet to planet. I'd compare it to Mario Galaxy, but I've never actually played Mario Galaxy so I have no idea if the mechanic is even remotely similar between the games. The gameplay is lots of fun, but the music is what really makes the game, in my opinion. The voice acting is great too, but I'm a dumb burger who can't tell if they're speaking some made-up alien language or just a language that I don't actually know.
3D Puzzle Platformer where you're trapped in a dream and have to find a way to die in each level to wake up. Very cartoon-y, cuts to black before each actual death.
3D Puzzle Platformer, but you play as a car, so your movements are like in a kart racer. It has a goofy, light-hearted atmosphere, and a surreal aesthetic - lots of checketed blocks and floating islands. The gameplay boils down to collecting golden "artifacts" scattered around to unlock the next artifact, and then the next. I'll admit that sometimes you're not really sure where to go next and I've had to look up a video playthrough a few times, but there are some tiles on the ground that tell you what the last artifact you unlocked was.
One of the best 2D Sonic games out there. It's in the style of the classic games, has 3 playable chs
aracters, and has a $5 DLC that adds 2 new characters and another game mode.
2D Platformer clearly inspired by Sonic. Has more of a focus on platforming and fighting than speed, is very story-driven, and has 3 playable characters.
Cute little 3D Platformer where you play as a little tree dude trying to collect water droplets or something. Pretty short and not much of a challenge, but very relaxing.
It's a compilation of about 50 Genesis/MegaDrive games. I'd recommend it unless you already have some other similar compilation on another console.
Top-down twin-stick shooter. 15 randomly-generated Floors, 3 big bosses (and optional minibosses on most floors), and lots of different guns. Supports up to 4 players in local multiplayer. Ideally played on a controller with two joysticks, but it can be played with individual joycons if you want to do multiplayer and only have the 2 that came with the system.
 
Can't believe more people haven't recommended dragon quest builders 2. It is better on ps4 or pc, but the only real issue is the load times (and the unskippable text, which is the worst I've seen, but the game is good enough for me to put up with it). I would compare it more to animal crossing or rune factory than minecraft, as you can craft and drop blueprints and the villagers you have recruited will build for you, and they will also do other shit for you based on their class, like farm and cook.

Suicide Guy (as well as its sequel, "Suicide Guy: Sleepin' Deeply") and Robonauts seem to both be on sale right now, and they weren't exactly expensive to begin with. Robonauts is 99 cents right now, heck if I know what price Suicide Guy is though. Darn eshop won't show me the price of games I already bought.

Gonna echo the earlier recommendation for Astral Chain. It's fun, varied, and while not having the deepest combat system out there, keeps on drip-feeding you with content throughout the game's story. All I really wish is that some of the main characters were a bit more fleshed out, and that a couple of the background characters were more present in the story as a whole.

All in all though (for a game that was essentially a retooling of Scalebound) I'd say Astral Chain is an extremely worthy spiritual successor to Chaos Legion, and if you enjoyed CL, you'll definitely like what AC has to offer.
 
Not just to you, but anyone, if you like action and infinite replayability, give Hades a try.

I think it's probably my new favorite game on the system.
 
If you want free to play online games then you can get rocket league if you like playing on the go. If not then I guess try getting maybe that Pikmin port or Ori and the Blind Forest. (I just realized I only recommended ports :( )
 
Trials of Mana which is a remake of one of the titles on the aforementioned Collection of Mana so it's up to you whether or want to play remake, original or both. One I'm not sure was mentioned is Ni No Kuni is a charming little RPG with art direction of Studio Ghibli. Battle system has similarities to Pokemon.

No the battle systems to both NNK games are awful.

They also both lose all energy like 1/3rd of the way through the game and become incredibly tedious.

Ah crap. I'm only early on in my playthrough. Usually one expects JRPGs to pick up as they go along.
 
If anyone is into monster collecting games, Monster Sanctuary is now on the Switch. It's basically a Metroidvania mixed with Pokemon and I've been loving it.
