There are plenty of reasons not to buy this game besides not having all the Pokemon, I'm not quite sure why people have latched onto that one thing. I don't really mind losing Pokemon (temporarily) and I'm still not buying them.
The problem isn't even that the Pokemon are gone, it's that there isn't evidence of a lightened workload in other areas. This game just looks like SM with slightly better lighting. But maybe that's what people are angry about and I'm just disconnected. Because I am lol.
I'd also chalk it up to the theoretical dam of tolerance breaking with gen 8 on the switch. You could justify some of the stuff on the 3DS as being "Oh, its because of the system its on not being powerful enough" or "yeah, same ol' Pokemon haha." Pokemon Go comes out and brings in a whole new market of people to enjoy Pokemon again, and this got core fans scared for a bit because Lets Go Pikachu & Eevee were games made to appeal to these newer Pokemon Go fans, but they were reassured by Game Freak that Gen 8 was in the works and would be more for the core playerbase. Gen 8 on the switch, holy shit! Its gonna be as amazing as Breath of the Wild or Xenoblade, its gonna look amazing! And then you cut to today with the trailers having graphical mishaps, the trees looking like Ocarina of Time textures, the perceived cutting of Pokemon that would lead people to say "oh hey they'll put more work into other parts of the game I guess." Combine that with Game Freak's new policy on not revealing close to anything, and you got what we're seeing today.It's more like people are shining a light on the flaws that Pokemon had, but were kept to a minority because no one really cared save for a small few.
It's essentially the popular talking point now.

I myself don't really care about the fact that Pokemon are being cut (as long as they remove the genies) and I do actually like that they're withholding so much information. My point is just that since they're doing this now and people are on the warpath of nitpicking graphical and design choices, it is really a lose-lose situation for them. I do think things could stand to not have choppy textures, and it'd be nice if the wild Pokemon didn't do 90 degree turns in air or in the water though, or if the NPC's didn't move in a grid-like way like in the previous games.To be fair, a lot of that is on the Pokemon fanbase for projecting their ideals onto the games. I'm not saying that the critiques aren't valid (well, some are, some are just complete bullshit like that stupid tree)
The thing is a lot of this is based on assumptions on what we're looking at, we don't know how the mechanics work - we don't know if the balancing is a thing, we don't know all the mechanics, and frankly, considering the fact that GF was heavily criticized for showing way too much for their games (Sun and Moon pretty much spoiled everything before the games were out), they're in a lose lose situation.

My mistake, I was thinking about Jolteon when I recommended Shadow Ball as Raichu doesnt get that move. You'll want to give it Focus Blast or Signal Beam if you're looking for special type moves that give coverage. Looking through Serebii though, I feel bad for Raichu; its got really bad coverage outside of the two moves I mentioned before.Oh okay! that would be a nice move; thanks.
Well, if we're talking coverage for an Alolan raichu, signal beam is probably best choice for it. Seeing as it's part psychic, signal beam will help him have that extra coverage for dark and opposing psychic type mons. I'm not either, Lunala looks good with it but Solgaleo looks meh, in the games he looks a tad bit better. Imo I'm not a fan of the starter shines either, iirc its because they're picking them out themselves instead of it being a palette swap, but the starters are white accented. Shiny Yvetal, Xerneas, and Zygarde have the same white accent, yvetal looks like bacon. Diancie has that hot pink dress, Hoopa and Volcanion are both piss yellow/gold.Picked up my shiny Solagleo. Thankfully I didn’t have to fool around with that app people were complaining about.
I have to say, I’m not a huge fan of the red colouration. This is one case where I think the original colouration is superior. Still, can’t look a gift horse in the mouth.
I think the general consensus with the shinies is that most of them aren't really that good. Like you said, they kinda focus more on using eye burning color combinations than giving the pokemon a cool new color palette.
