Is he actually envisioning Xochi as a real, physical being boarding a plane for Israel and going on a biking trip, who will then tell him all about it when she gets back? Or what does this actually look like in his head?

That picture is how he envisions Xochi to look, and somehow she's keeping in contact with him while on this 'vacation' and punishing him as needed for his transgressions. So honestly, I don't have a clue what he thinks she is, because none of this works the way he says it does, ESPECIALLY when he's writing travel log entries for days that haven't even cone to pass yet.
Im leaning more toward it all being an 'imaginary friend' sort of deal, just like his imaginary country. It's a safe space to him where nobody else can intrude on it, because it's all in his head.
