Thinking about Star wars in kingdom hearts always makes me think about this video
Sora vs Vader would be pretty awesome, but also the story behind it. I love the comments in this video. You first do stuff in the prequels era, doing stuff with Anakin and such... but then later when you come back it's during the OT timeline and well, the comment below.

"Just Imagine Sora arrives to the SW universe. Hears about order 66 from a survivor, about Anakin, how amazing he was. Then about Vader how he slew so many Jedi, rumors that if Anakin was gone... maybe Vader killed him. Vader shows up, kills the Survivor, Sora get's some strange connection with Vader, somehow senses the relation to Vader and Anakin. This leads Sora to think that Vader is Anakin's Nobody, then we get THIS. The realization that while Vader IS Anakin, he is not a Nobody."
"Honestly, Vader would be an excellent way to discuss how a heart in pain can be an awful thing. Go through the whole world with sora fully under the impression this guy is a heartless or nobody only to find out that no, he's just a guy who's heart is in too much pain"
"I feel like Darth Vader is one of those rare villains who can push back against and even make the hero question their own beliefs."

Sora's love and bonds made him stronger and saved him, while Anakin's cost him everything and darkened his heart to the point that there's nothing that Sora can say that can make Vader change in anyway, only Luke could. Sora's never faced such an (morally) immovable rock like him before. I honestly think if Nomura is writing the thing... he'll probably do Vader more justice then anything Lucasfilm's done in like 20 years.
(also, I could totally see a post-game boss battle where you face off against the Jedi Ghosts of the dead jedi, with a redeemed, super-powered Anakin as a bonus boss)
