Imo there are two primary factors that drive Eugenia into this mindset. She isn't a malingering type, she isn't a munchie.
A majority of her family suffers from varying degrees of obesity. It isn't uncommon for a parent or sibling who is obese to get controlling of the average sized members of their family and cause body issues between them all. I'm not saying her mom and brother directly caused it, but I am saying it is possible they had a hand in it or Eugenia became obsessive to avoid it on her own. I wouldn't be surprised if her mother berated her and put stuff in her head like "If you eat that you'll become like me" and despite Eugenia loving her mother, she really doesn't want to be obese and I don't blame her. But if this is something that has been happening for years and years it's devolved into something worse.
This latest downward spiral was likely triggered by the death of her grandmother. She was holding pretty steady at her weight even if it was extremely low for a while. But she lost what looks like another 10 lbs after her grandmother passed. I think that's just confirmation that a lot of her troubles are familial, really.
The second factor is the whole aesthetic in her head that she's got going on. She's stuck in the mid to late 2000s, being skinny was considered cool. Anorexia was cool too. When you already have body issues and don't see yourself as you are, wanting to fit an aesthetic means someone may go over the top to achieve the look and not realize just how bad it is because they literally cannot see themselves without seeing whatever their mind has conjured up. The whole weeb/scene kid/emo kid/mall goth overlap subculture definitely promoted anorexia and Eugenia might justify her actions by saying to herself that she is what the girls she looked up to growing up wanted to be. But I don't see people discuss how her whole aesthetic also ties to the body image often, so I wanted to bring it up, since her whole brand and culture is one of her selling points.
