It's extremely contrived you need to do it to get the true ending. (Unless you count the *other* true ending ;})
It involves the most irritating character in the game going on a date with someone she has absolutely nothing in common with and has never visibly interacted with.
There isn't even any in-game evidence that they've spoken before, only Mettaton stating that Alphys has a crush on Undyne. It's not even implied that they're friends.
I didn't even think about this before but Alphys lives in an environment that is shown to be physically dangerous to Undyne so they'd likely only have met at formal royal events.
The only reason that Alphys's relationship holds up is because she's a woman. If she was a man (as originally in Toby's sketches) her relationship would openly be ridiculous wish fulfilment. Actually, the rest of her character hinges on this too. That's how she gets away with being really fucking irritating.

I haven't played it in years so you may be right. I just remember my first playthrough seeing that Alphys was supposed to have a crush on Undine, but barely even realizing Alphys was a woman.

I do remember I thought she was annoying though.

It's mostly just that the character you play basically has no character of its own. Deltarune follows up on this concept by making it a "vessel" for the player in the lore itself, while Undertale only implies it. People project themselves so much on this empty character that they don't even care about what it's canon age is. Still weird but understandable why one wouldn't think twice.

Alphys and Undyne are dykes, Mettaton is supposedly a tranny and there's 2 NPC knights where at least one of them is gay for the other. I found Undyne and Alphys to be annoying and boring and Mettaton was good before the final design was revealed. The two knights could be overlooked as comedic.
