I'm fine with cheap olive oil as an ingredient, but EVOO has an aftertaste.

It seems counterintuitive, but different brands of EVOO can taste wildly different. There are some that taste repulsive, while others I'd honestly happily drink a raw shot of. Definitely one of the times where shopping around for a good brand is worth it.
