Even something like Pacific Rim, which while more of a love letter than straight adaption, was just such a great watch because of how much love for the genre you could see Del Toro had. It made it even more painfully obvious that level of passion when you compared the first to the abortion that was the second which reeked of trying to cash in.
Of that genre I liked Prince-sama the most even if it wasn't the most romantic just because of the sheer level of weird that it accomplished. As for fanservice, I think it had a decent level though it's been a while and all I can remember is the ending for s2 which made even /a/ do a double take with how much it included. Haven't seen it myself but apparently Meiji Tokyo Renka is pretty decent, though it has a bittersweet ending if that's a turn off.
One of the problems I find with recommending most is that they're adaptions of otome games which work much better in that format, the anime has to cut so much. I liked the Hakuouki anime well enough, but I remember it leaning more into being a historical drama than an otome, you have to play the games to really get that element (the numerous cgs + multiple routes). There's also an anime adaption of Code;Realize, one of the most popular otome games out there, yet I've never really been interested because I imagined a lot of it had to be cut to streamline the main story.
Might have some luck with stuff like Ensemble Stars! (Just ignore the cancerous community surrounding it), IDOLiSH7, or A3 if you don't mind idol since those are just adaptions of phone games that (usually) don't suffer as much from the limited aspect of episode limits.
