I'm not even sure she legit fakes it intentionally. I just think she is both stupid and immature, but also socially so inept. She probably got involved with some girl as a teen because of convenience/the other making a move and she understands herself and others so little she just stuck with it.
At this point she needs to keep the quirky label and she already talked so much bullshit about it that it would be weird to just stop.

Amber does lie a lot, but I think some people overestimate how much of it is cunning and deliberate. Amber is mentally delayed. A lot of people come up with bullshit as teens. You know, when you just invent a "so me, hehehe" stupid habit that makes no sense and you just do it to do something. You can clearly see that with her, with things like "UWU, I only chew around chicken nuggets and throw away the middle". Like nobody actually does that, she just invented it.

Being a supposed lesbian gives her social points too. As much as some people still like to pretend that gays are literally murdered and oppressed, all of her social interactions come from the "queer" community. She never had any proper straight friends. The only reason why her, Becky and the two dudes even shacked together was... well, Gaycare. There is no way Amber with a boyfriend could have ever lived with another straight couple, it's a case of freaks with freaks.
It's literally a safety net and comfort blanket. You can be a disaster, the rainbow covers you still.
