I skimmed through the birthday book scan. A lot of bad scans and hard to read handwriting together with quite a bit of inside jokes makes parts of it hard to put together. But here are some of the parts that hasn't already been posted that caught my attention:

Trump and Clinton are the names that really stand out, but obviously nothing new there.
Brooklyn seems to be stories and texts from when he was young. Why there are two Girlfriend sections is unclear. A children section? Odd, but at least one of them seems to be from his nephew or niece. The assistant part seems to be women who worked for him, and seemingly more...Business are people who worked with him at some point, and Science is a bit unclear.

Some of the letters will definitely achieve their intended goal -- some well… you will have to read them to see for yourself. Girlfriend #1:
Says they met after having massaged Ghislaine, and Ghislaine asked her if she could massage the feet of her "employer". After the first job Epstein immediately asked her if she wanted to go with them to Florida that same night.
Girlfriend #2:
Apparently met Ghislaine at Palm beach, who collected breast photos for Epstein, which seems to have made her be invited home to Epstein who then asked her to take her top off.
Girlfriend #3:
Says they first met after being taken to his apartment by someone named Clark Schubach who then quickly leaves. Epstein immediately asks her if she's a virgin (which she apparently was). Also a bit ironically writes by a picture of her changing clothes that she can't get a moment of privacy when Epstein has his camera out.

Assistant #1:
Assisting Epstein with some bikini pics. Doesn't seem like she had those tits when she worked for him in the first picture.
Assistant #2:
Again seems like there's quite a bit of assisting going on. References meeting Clinton, Trump and other famous people through Epstein.
Elliot Wolk:
Interestingly references possibly meeting a teenage Ghislaine through together working for Robert Maxwell.
Ghislaine ending the book by quoting "Know when you are winning.
All in all it's filled with sexual references, which indicates that's what a lot of their relationships revolved around. The throughline is also that he likes young women, but not necessarily underage ones. The only clear reference I could find here about going after underage girls is when he was relatively young himself (but unclear what his actual age was). But there's also quite a bit of creepy suggestive stuff like the drawing posted earlier.
The largest mass of underage girls was probably the eastern european prospective models he flew in with the help of his pall Jean-Luc Brunel (who also contributed to the book):
