Funnily enough Pikmin ARE present in Super Nintendo World, they're basically the park's equivalent of Disney's Hidden Mickeys.And they called it a Nintendo theme park, where's Star Fox, Zelda or Pikmin, even Disney World knows to cater to there fans.
There was a Pokemon Theme Park in Japan waaaay back in the Gen. 3 days in 2005. It didn't last very long, and almost all of the rides were meant solely for children.
