I guess we'll never get an answer as to what the panic was all about. Oh well.
They left her all alone with not enough food to last her the weekend. The shop was too far away, and even if she could unlock the gate of the compound, she doesn’t speak Arabic, and no-one in Syria except Salah speaks English.
This, but there is a bit more to it in my opinion.
She was pissed.
She admitted that she felt "thrown away" because, even though the split up was mutual*, she wanted him to be upset about it. She wanted him to cry, to fight, to declare his undying love because then she "wins".
It would mean that after all the money she paid to rent him that he had developed true feelings for her (what she and other prostitute daters like Russell Greer and Boogie always hope will happen. They just need to get in the door and she/he will see how great they are and fall in love) and oh boy could she ever rub that in the faces of all the high school girls who called her ugly! And you too, Nadar! This handsome man is practically threatening to kill himself if she leaves, isn't that romantic? Isn't she SO desired?
But he didn't do that.
He shrugged his shoulders and said "Kay, I'mma go hang with my cousin now." And she boiled with rage. This isn't how it was supposed to go, and it can't be her fault,
it's never her fault.
And this is a bit weird, but it also can't be Salah's fault in her mind, because if it is it means he will never react in the way she wants. He'll never declare his love or make a grand show of it, and she can't have that either (because she wants them to love each other and be soulmates).
So it HAS to be his family's fault.
But his family has been nothing but nice to her face, so how can she villainize them?
Well Salah probably made some off hand comments about them being disappointed he doesn't have kids, and she KNOWS they're all talking about how fat, lazy and stupid she is. So she starts imagining these conversations wherein they're all whispering in his ear, convincing him she's horrible and useless (as if he didn't already know that), telling him she's a shit housewife (duh) and all the other insecurities she has about herself.
They all just exist in her imagination, but Chantal is very stupid, so to her they may as well be real.
What's worse is they provoke real emotions in her. That's why we hear slips like they're "probably" telling him she's talking about them, even though she admits they don't speak english (also why would they be watching her live on their non-existent internet while on vacation?)
So now she's convinced herself that they're all talking bad about her and even worse that he's listening to them and not defending her (from these things they're only saying in her head). She's worked herself into an incoherent, piggy rage and the only way to soothe her ego is to test him.
She LOVES to test men. She gushes about the time she got a friend to call Bibi pretending to be a booty call and he turned her down because he was "seeing someone". She also admitted to making a bunch of fake profiles to "test" (and later contact, because her number was blocked) Nadar.
Speaking of Nadar, he also failed this exact test; She lost her mind one night when he made plans to go out with friends and then actually went out with friends instead of canceling to do literally nothing with her. She can blame coke (then) and cheap meds (now) all she wants but her behavior was identical; she blew up his phone, she called him names, she threatened to leave him, said their lives were incompatible etc etc.
I've met a few people who play similar games and it's all about the sense of power and desirability it gives them; the idea that you'll cancel all plans, no matter how far in advanced they are, how fun they may be or how expensive it may have been, to do nothing with them, and that you're willing to ditch everyone whether it's friends or family, and choose
them instead.
I knew one person who took it to a bit of an extreme and would cancel plans with her date, then wait until about an hour before they were supposed to originally meet up and try to remake the plans. It delighted her that she could treat her dates/partners so poorly but they'd come running back if she snapped her fingers.
This is what she wanted from Salah. When she said last minute that she wasn't going he was supposed to call up his family and say the trip was off. He was supposed to choose her over them, and even better choose NOTHING with her over a fun, beach weekend with them.
When he didn't, and even worse when he extended his stay with them she LOST IT.
She was upset about the food, sure, because that's what she needed to soothe her feral hog rage, but she was already screaming at him in her head (and his family for manipulating him, otherwise he totally for sure would have chosen her over them) and then he
doubled down.
So she starts doing exactly what she did that night with Nadar; starts sending him texts and calling constantly to call him every name she knew would hurt him the most. She wants to hurt him, yes, but moreso than that she needs a better reason for her rage. She needs something she can show to get her audience on her side.
Notice how even at her angriest she wouldn't release the full text logs, just cherry picked snippets? That's because she was goading him, probably for hours, trying to provoke a response that would seem like a threat. That's why she quickly got online the second she had one, and it was vague and pretty non threatening.
Still its all she had to work with so she ran with it. She projected all of her internal rage against his family on to that one line, screaming that they were going to physically hurt her. She played the victim card hard, trying to convince people that her role in the fight was only her defending herself. The panic wasn't fear, it was rage, frustration and the fact that she couldn't drown all those feelings in gravy.
Fun fact: It's also why she was freaking out on Peetz lately for "not defending her" in his chats. She's still angry about Salah (allegedly) not defending her from his family and is projecting that rage super hard on to him.

*I do not believe it was. I think she threatened to leave in a tantrum and he called her bluff, knowing she's now more trouble than she's worth.
