The Freedom caucus isn't asking for THAT much. They mostly want more influence with committees or to have the threat of primary funding being given to opponents removed.
Even if they did get someone other than McCarthy, there'd still be the problem that the Freedom caucus would want those committee seats and they've now shown they will refuse to vote for anyone that won't give the seats up. Ousting McCarthy would end up making no difference.

The speaker is the political leader, parliamentary leader, presiding officer, de facto leader of the body's majority party and the administrative head of the institution.
