Why does chicken/turkey skin taste so good?

The skin isn't really better except for two things that happen in preparing:

1. It's seasoned better (because if you put salt on a chicken, the salt is on the skin)
2. It's grilled better (because the Maillard reaction happens easier on the outside than the inside)

But yes, it's also because of the healthy unsaturated fats.
 
Skin is gross and is the reason why you retards are fat. The only reason why it might taste good is because whoever cooked the chicken only seasoned the skin and not the muscle. People are attracted to salts used in seasonings. Overly seasoned skin is why basting is so important--to provide flavor beyond skin.
