Irish English can be difficult even for us. I can understand most of him being used to Northern Irish accents, County Kerry accents are a lot more thick and compared to what I'm used to
My shot at transcribing:

What's hilarious is it comes in waves, sometimes I'm like "oh yeah I can parse what he's saying" and then he and the other shepherd go on a tear of Irish mumble nonsense and I'm genuinely confused what they're getting at.

Australian. Seriously; they all sound like Crocodile Dundee or Steve Irwin. I mean, Steve Irwin was the coolest MF to ever exist, but I cannot take you guys seriously.

When I was in New Zealand I met a black Kiwi, and holy hell, I could not understand that guy. His accent was a mix of NZ and American ebonics, it was nuts. It was the first time I had to tell someone to move on because I literally could not understand the words coming out of his mouth, and I work with a shit load of Laotian immigrants.
