I've always been a fan of cave houses and it looks like that's only going to get better with the new update.
What I really want when it comes out is some shack in the middle of an untamed lush cave.

I also like the traditional "fort with lit up walled garden" design but that's been redundant ever since beds were added.

I love building into cliff sides, but it's been hard to find a really nice looking one in a world to build into ever since they made the worldgen tame and boring with the addition of Biomes in the Halloween update. I'm fairly happy that after a decade, they're making the worldgen less boring and more like how it used to be.

Haven't played minecraft in a while, but as a kid I always liked finding large mountains and building a giant home inside them, with only a door to the outside being visible.
