Other than saying they taste like potatoes. How would you describe a potato to someone who never ate one?
 
If you overcook it, it kind of feels like overcooked beans. If you made a paste and put it into an oven.

Then again, I am not even sure, I never really tried it.

Potatoes taste different depending on how they cook. Let's start with the fact that it's a starch.

It's not so tasty in itself. It's more of a vehicle for other flavors.
 
Straight or French fries taste like starch, if you cook them in onions and butter like I do then sweet.
 
the skin has an earthy, wheaty, almost metallic quality to it but in a vegetal way, like the taste of greens, the inside when cooked is soft and depending on the potato can taste kind of like a nutty rice with just a hint of tang and sweetness to it alongside a flavor similar to the skin, when it's not cooked its more bittersweet and almost tastes like a weed
