I remember during the March for Science these same people were saying they were on Mother Nature's side, yet now she's oppressing obese people. What happened?

The problem with colleges nowadays is that in a fair portion of cases, they're expensive dinosaurs.

As you noted, a great deal of the programs offered are effectively worthless--so why bother spending the money?

They're a business, and the purpose of a business is to make money. But they try to pretend otherwise. They make money by inventing nonsense degrees and dishonestly maintaining the fiction that higher education is the last bastion of free study and enlightenment and if you're an 18 year old, you're a bad person and a loser if you don't go. It's no different from tabloids full of pictures of muscle men and bikini models asking the reader "why don't you look like this?" with ads peppered throughout for bullshit protein supplements and plastic surgery.

Maybe it is a "Social Justice" issue.
Maybe fat people should be "Socially" shamed into not being fat. That seems like "Justice" to me.
