You forgot to mention that recipe is from an Indian who was raised in the UK and trained under Heston Blumenthal (one of the best chefs in the world and the reason why he's in Fallow's video as both of them also worked for Heston).

Even that level of culinary pedigree isn't enough to make up for the innate flaws of the cuisine.

It's not overcomplicated, the Fallow guest just used fresh individual spices instead of a premade dried spice mix.

Indian food just isn't very good, even when made with the highest quality ingredients by someone who went to culinary school and worked in fine dining restaurants.

Well, he does explain in the interview video its where he met his wife. In short, he went the JD Vance route and became invested in India via his wife.

there's like a handful of cables in the indian ocean that connect india to the rest of the world, most of them run near the iranian coast. one blessed missile from allah or an accident with a burger submarine and the internet becomes 80% less brown overnight
