You know how sometimes in an interview a potential employer will ask this question or something along those lines, what are some ideas for good/unique responses to this? I feel like my answers always sound too canned or generic.

Whenever I got asked this question in a job interview I tried to spin it into a good thing. My go-to answer is something along the lines of "Sometimes I have a habit of focusing on tiny details instead of looking at the bigger picture. I typically overcome this by creating a project plan with specific steps and time limits, etc".

Fuck behavioral interview questions. That said, the way you want to spin that question, and the interview as a whole, is to spin it into positives.

So first identify a weakness and then follow up with how you work around this weakness, learned skills because of it, etc. Choose a weakness that won't be harmful to your overall role. So if you're a nurse maybe don't say your weakness is to be a carefree person cause a nurse must be attentive. If you are going to work in a factory, don't say your weakness is that you can be reckless because warehouses and factories don't want reckless people around dangerous machinery.

So for example say my weakness is that I can be trusting of people (if it actually was, I wouldnt be a part of Kiwi Farms), this trusting behavior can pose as a security hazard but I overcome this vulnerability by practicing good opsec and computer hygiene. This trait can also work to my advantage because it allows me to approach customers without bias or predjudice.

Do a powermove and say "You" and wink to the interviewer.

If it were me and it was just for the funny. I would say something like, fit women, specially ones with defined abs. Or something gross like sweaty women armpits. Then sit back and watch their reaction.
