Because a good chunk of their fans are glue huffing twats, who believe that a bunch of dorks somehow made the source material "better", and frankly this shit only works when the source material is actually terrible. That's why SAO Abridged walks circles around the actual SAO. While DBZA and HuA is just takin' existing work which was fine or good, and then busting out yer crayons all over the script and going "Hurr durr..me make it bettah! Me understand writing!", an this is where I think where TFS really kinda flops. If someone actually gave 'em a really bad anime, they sure as fuck wouldn't be able to "improve" it, because they don't really know how.
After nearly 20 years it's ok to admit that dbza was just Dragonball dumbed down for the family guy crowd. Same referential humor, same flanderization, and same type of midwits behind the scenes.
They even admitted by the end they were trying to 'fix' problems with the source material by inserting stuff like that video of Gero's kid who 16 was based on getting killed by Goku, and ending the series with Cell because anything else was an anti-climax.
That's obviously an excuse they made up because they didn't have the motivation remaining to keep going through to the end of Z.
Just watch HFIL for an example of everything wrong withe the writing of TFS its got a few funny moments but is completely forgettable relying on in joke references and one dimensional characters or simplye put its Dragonball themed Family guy.

Something Witty at least changes things enough that SAO Abridged feels like its own thing than a SAO replacement, though it is a genuine improvement because the people behind it have a stronger understanding of gamer culture than the actual SAO author.
