There's a lot of arguing and discourse about this but from what I can tell the general consensus is that bi is just being attracted to "two genders" and can include a preference, with pan meaning "all genders" with no real preference.
It's a lot of semantics, really.

bisexual or biromantic: attraction to two genders, like male and female
Polysexual or polyromantic: attraction to two or more genders
Pansexual or panromantic: you don't give a fuck

Always thought it was weird that skeletons were a popular target for gender/sexuality headcanons. I suppose it's because they don't have junk anymore, but that also limits who they can have sex with too if they're not labelled asexual.
