Stilgar is explicitly described as a thin and tall Arab man with a large glistening black beard, he's a Fremen, and a main character through three of the books.

Liet Kynes is a man in the book of course, but his race and gender is pretty irrelevant as a foreign born citizen of Arrakis, and he's in about two whole scenes before he dies - so who really cares?

I mean, I'd prefer it if he was totally accurate to his portrayal in the book, but it won't ruin it for me.
