Kodiak makes a really nice whole grain pancake/waffle mix. I use the regular and the chocolate versions. Apparently they do a cornbread mix too but I have yet to find it at the store.

I've seen it at the store where I work, but it's kept in a different aisle than the pancake/waffle mix.

Blend oatmeal, cottage cheese, eggs, whey protein and some baking powder together and you get a batter for some very nutritious fluffy protein pancakes. Add cinnamon, nutmeg, half a ripe banana and some (real) peanut butter to give it a nice flavor boost.
