Cheddaring is just a technique in cheese making where they cut it up and layer it when they make it so cheddar cheese is a name for a technique rather than a name for the taste.

To bring back an old post; I saw the supercut on this guy on the MATI YouTube channel recently; does anyone have the backup of these videos? It appears his channel got deleted and/or terminated.
 
I got some of the Stockinghall Cheddar (the BEST cheddar in the world) to try and damn, I never thought I'd say that a cheddar is a little too intense flavor wise for me. It has those salt/flavor crystals which are packed full of umami. It'd be better paired with something else than by itself for me. Murray's Cheese does recommend trying it with their apple butter so I might try it with some jam and bread. Null might be shook by this cheddar if he tries it. Haha wouldn't it be funny if someone ordered it for him as a Christmas gift to do a cheese review on haha just kidding unless...?

I also have a bit of Brillat-Savarin cheese from France that I like more since I prefer soft cheeses. Forget your basic bitch brie this stuff is so much tastier and flavorful. Highly recommend for a holiday spread but it is a little stinky.
 
not every cheese is a straight up eating cheese. soft triple cream cheese are the best you're going to get on a fork.

protein crystals in aged cheese are normal.
