It's popular because Young Adult and even Adult Fantasy novels are produced almost exclusively for women. In addition, because video games are familiar territory for young men and the LitRPG genre provides an easy setup to hand-wave a lot of worldbuilding regarding magic, you get the perfect medium for boys who enjoy reading to get something that isn't teen romance.

In the end, it boils down to a lack of published content for boys end with LitRPG stories seeing huge success because their the only thing around, in addition to being easy and fast to write.
