@Null you are talking about something like a 1980's "square body" C/K chevy truck. (C=2wd, K=4wheel drive)
Mechanical carb or crude but reliable TBI fuel injection in the later years.
The automatic transmissions (TH350,TH400,TH700r4) use mechanical brains to operate. No computers.
They also came in manual transmission.
The HEI ignition system is basically just some transistors and capacitors. You can find the schematic and make your own if you want.
They small block chevy engine in them is the most common made motor ever and you can still get brand new parts for it.

Josh has nomadically lived across Eastern Europe for years. Never staying in one feeding spot for too long. His territory is an approximate 8.5-hour drive from Dracula's Castle.

Car suggestion: 2007-09 Honda Fit. Great gas mileage, way bigger on the inside than it looks on the outside and almost impossible to kill (especially if it has a stick shift tranny). The only computery bits are the ECU and the stereo. One of the last of the Goldilocks era cars (early 1990s-mid 2000s) when there was enough computing power to make a car super reliable but not enough computing power to spy on the driver.

I like Hondas from 2000 - 2005. They look nice, they're affordable, easy to repair/find parts, and their engines run for 200,000+ miles, maybe even 300,000 if well maintained. Their engines are so reliable that my buddy drained an engine of all it's oil and it didn't seize. A V6 will get you all the power you need. You can probably find a fixer-upper for 1-2k and then put 3 - 5k into maintenance for replacing the old parts and you'll have a decent car that won't need repairs for at least 5 years. After the initial repairs, a maintenance worst case scenario would be 1k for tranny repairs or a new catalytic converter, or at worst 3K for a new engine. If there's too much rust, don't buy because extensive body work can run higher than a new engine.

Really when it comes to self sufficany & cars it depends on where you are. My uncle had a chevy truck from the late 80-early 90's and he couldn't get parts for it. While on the other hand a Volvo with a redblock engine you can find parts for pretty much everywhere in Europe. B230k i remember being one to avoid cause it had issues with the carburettor while the B230FK being the best one cause it was reinforced and oilcooled.

The true redpill of self sufficiency is honestly more then just a car tough. Well with tested groundwater, a working indepent sewage system, farming & forresty skills and some basic mechanical and electrical engineering. Having a car or a gun matters very little if you don't have the knowledge of how to do basic maintance like changing a timing belt or how to diagnose common electrical faults like the o2 sensor.

For anyone intressted in this type of stuff a good first step to indepance would be looking in to something like wood gastrification, as it is proably the most simple way to power something off the grid with a truely renewable resource: wood. Careful tough as carbon monoxide is highly toxic if you aren't careful.
