Start with Under Night Inbirth Exe Late, you'll learn the basics of fighting games' universal controller layout and what specific command signs and chains mean. You can do it in a weekend and start pulling off 99 hit combos.

Street Fighter V is one of the easier fighting games to pick up, although it's also one of the more underwhelming fighting games out there. You can see it as training wheels for if you want to learn how to play fighting games.
