This is only true if you use bad cookbooks that are just a mishmash of random recipes from various locations compiled together. A well-written cookbook will have a shopping list at the beginning that has nearly everything you’ll need for most recipes. Some books also have meal planning tips, equipment, etc. It will divide each recipe into stages for what can be prepared in advance and what should be done before serving. It will tell you how to modify the recipe for different ingredients so you can learn one dish and cook a dozen.
For example, four herbs you can use in every meal are thyme, parsley, bay leaves, and tarragon. Sure, you can use other herbs but those four can do a lot of work for you.
And not everything needs to be simmered, although that’s the best way to cook economically. Traditional cooking involves sautéeing, pan-broiling, roasting, etc. These are much shorter than simmering. Your time is also overstated. Nothing needs 9 hours to cook. The longest thing that needs to sit in a pot is stock. A tomato sauce, for example, only needs around three hours to develop fully, but you can get away with less time if you know what you’re doing. The really long recipes are meant for crockpots that can be left alone (not a fan of those however).
I learned to cook from these kinds of cookbooks and now I have nearly everything I like to cook memorized. I can go to the store, pick out fresh, in-season vegetables and the meat on sale and come up with something without needing to consult a book. It’s just experience that people need to push themselves to do. Same as doing anything else around your house.
P.S. all online recipes are terrible. I don’t know what it is about the Internet but it is a terrible place to get recipes.
