Well think of it this way. The colour spectrum is (classically) continuous, not discrete. But we can break it up into chunks. Orange, yellow, green etc. These aren't absolute, definite categories. You can be green but towards blue, or towards yellow etc. So the idea that people are all different but we can't impose models on those differences is fallacious. If I made a category for "has 2 eyes" and "other", people would fit in pretty well, would they not?
