The Dude killing hundreds of people is arguably more canon than the pacifist route. The first game was literally "kill every single NPC in this level" while trying to figure out how to end the level after killing everyone because RWS used a weird ass hotkey to progress levels. The pacifist route in 2 was mainly added as a challenge and the Dude constantly fights against it in dialogue.
To be fair the pacifist route in 2 was just a total troll move that they used to argue that their game didn't promote violence as the main focus of its gameplay to counter the retarded shitty parents who blame everyone and everything but themselves for their spoiled shit spawn acting like psychopaths. Everyone knows Postal is all about being a chaotic psychopath.

The pacifist route isn't really intended as legitimate or expected, but it is nice it exists. While I think it is reasonable to go through the game without slaughtering every single NPC that crosses your path, you have a harder time not defending yourself against the enemy factions who gun for you during objectives, which is, in its own way, going postal.

They have been SOOO slow with patches for postal 4 but they did one along with the announcement for this game actually. It probably didn't sell well enough to enable them to polish it up faster but that's entirely on them for fucking it up to begin with, they shouldn't have tried to make it so big and focused on topical humor and good writing instead.
