I'm actually in the process of replaying Grim Fandango and agree that Glottis is great. The part where he chucks his heart into the spiderweb is also hilarious.

I just love his design and play style a lot, although I don't like his axe's design, it should look more brutal.
Another one is Hakumen from Blazblue, his playstyle is really really fun.

I have a liking for cool "operator" type characters like Adrian Shepard (HL1) or Hunk from RE2. Characters that don't say much and just do what they have to. Maybe it's the Marvel type writing of recent years that have made me appreciate more "reserved" type of characters.
