Attending services is really only a thing for men, and even then it’s an ideal rather than mandatory. Nobody is following converts around to monitor what they eat or even whether they go to minyan.
For converts who want to make aliyah to Israel, there is a requirement to wait a year after your conversion — at which point you have to provide testimonials from your rabbi and other community leaders that attest to you remaining an active member of the community who performs mitzvot.
Unfortunately lots of sincere converts later go astray and fall back into old habits. The number of conversions rescinded is infinitesimal. Converts can pretty much do whatever they want without it affecting their conversion status.
Some of the charedi rescind conversions in the U.S. It’s rare to rescind a conversion but it happens.
