Spyro: The Eternal Night comes to mind for me. I remember it being absurdly difficult, so difficult my gamer father couldn't even play it. It took me YEARS to beat it and once I did, I realized how short it and it became strangely easy after that.

My husband is making me play Jak 2 for the first time and what a bunch of fucking bullshit that game is. I loved the first and third one, so what the hell is going on with the difficulty spike? I haven't even reached THAT part yet.
 
The first Teenage Mutant Ninja Turtles game for the NES. Bullshit. Never made it past the first few levels. I have zero nostalgia for that brand of "oops you miss-timed a jump by 0.3 seconds! You're fucked!!" level design.

Revenge of Shinobi was hard but damn was it cool as shit
 
I remember the final level of 007 Golden Eye: Rouge Agent being fucking impossible. Giving every enemy a fucking one hit kill hitscan weapon.

Jak 2 is legendary bullshit. I’m convinced that it’s not a very well designed game, though that might be residual saltiness over the fact I’ve never beaten it (legitimately not my fault, disc was scratched to hell and refused to play beyond the 75% mark). Out of curiosity, by “THAT” part do you mean the first tank section or the Flying Fortress? Some people found the Manhood tests difficult, but that fucking tank section is complete bullshit.

The first Sly game is also pretty hard. It’s not too bad until you start doing the challenge runs. I only ever did the first level because I quickly realized that they don’t fuck around. God bless whoever designed those runs, they had them timed to the exact tenth of a second you needed to complete them. To this day, I still get anxious thinking about that fucking engine room.
