Chicken and sausage gumbo is quite good, I make a big pot four or five times a year. You don't use chicken sausage, you use pork andouille and a little tasso for kick, and chicken breast browned and cut. Some people cube the chicken, some people just put in chunks and let it separate as it simmers.
I bet Johnny only simmered his gumbo for an hour or so, that's why it's so thin. Did he even make a roux? The jumbo shrimp is a retarded touch. If anything, you should use a ton of mini-shrimp, not jumbo. And he definitely fucked up the okra. TBF, lots of people fuck up the okra. It looks like he put way too much in, and he probably boiled instead of simmered.
