Sure thing, Johnny Boy. First of all, you don't pay for multiple characters. The subscription gives you the ability to create up to I believe ten characters on a single server, up to a total of I believe 40 characters total. So there's that particular nuance out of the way.

As for mastering every job on one character? No. You can get every class to 60, sure, but having each one properly geared for endgame on one character? Literally impossible. You can complete 2-3 full sets of gear before a new patch comes out and renders it all obsolete (more if you also do hardcore raiding, but still not enough to do every job.)

What's more, the Heavensward expansion introduced specialization for crafting classes. One character can only specialize in three craft classes at a time, so if you want to have the full array of crafting possibilities, you need several characters.

And lastly, as a secondary reason, some people play an MMO to roleplay, and they may enjoy having more than one character.
