I'm gonna stick with ornstein and smough just because i have never felt that triumphant over a video game victory in my life. Sir Alonne is an honorable mention.

Poll comes with the caveat that I've never played Demon's Souls.
 
Have to agree about Ornstein and Smough. It's one of the few boss fights that I really look forward to despite the fight itself being quite tough.

I'll also throw in Belltower Gargoyles, Gaping Dragon, Quelaag, Sif, Gravelord Nito, Artorias, Manus, Kalameet, and Gwyn. (The order in which I fought them)

For Demon's Souls, I remember enjoying fights like the Tower Knight, Dragon God, Old Hero, Lady Astraea, and the boss before the "final boss".

Haven't played Dark Souls 2. Although the Looking Glass Knight fight seems pretty cool. It's kind of like the Old Monk fight in Demon's Souls.
 
Fume Knight was my favorite, I play a tanky build and the way he's designed is extremely punishing with tons of chip damage and stamina drain even through greatshields, and wide attack arcs. Incredibly satisfying finally beating him though I had to switch to a faster weapon. Alonne was similar but not as tough, beautiful arena though.

Burnt Ivory King was awesome when he emerged from the portal but the boss itself wasn't that impressive. Sinh was also a great boss. Unfortunately the base game of Dark Souls 2 didn't have very memorable bosses, Velstadt standing out the most for me.
 
Fat Man and Little Boy. I think it was a fun to fight two unique characters instead of the Darksouls 2 method of here's two of the same guys you already fought before. The fact that phase two is different based on who you kill set's it apart in my mind. Seeing the old Dragon Slayer in DKs 2 was like seeing an old friend before stabbing him in the face.

I liked the Burnt Ivory King fight because I'm a fan of large battles and liked leading a company of knights into basically hell. But farming for Loyce souls was a pain because so many hosts refused to get all the Loyce Knights to help.

I also like the Gaping Dragon fight just for the scale of the Boss. What you thought the Asylum Demon was big here's this huge dragon in the middle of the sewers.
 
I have largely come around to the idea that Banjo-Kazooie has one of the best boss fights. The write-ups I have read usually mention that a good final boss makes you use all of the tools you've been given. Banjo-Kazooie's final boss does that really well.
 
Aksis from Destiny 1 was a sick fight. Clearing hard mode with randos was one of the best experiences I had with the game. None of the D2 raid bosses came close but I didn't play anything after whatever that Witch Queen raid was called.
 
I'm going with the fight I remember vividly and has never left my brain: the final boss fight of Ace Combat Zero against Pixy.

It's not the most complex fight, but that music combined with the radio chatter as you dodge tactical nuclear missiles being lobbed is pretty epic.

Most Ace Combat final missions feel epic because they have you flying through tiny holes in gigantic superstructures and in some cases literally down the barrel of a railgun, but none compared to that single fight, and this one is an actual boss rather than a thing.

Honorable mention to that fight you're supposed to lose (but can win) at the beginning of Ninja Gaiden. Extreme satisfaction of the win after hours of fine tuning and failing, followed by the swift kick to the stomach of the scene that follows differing exactly zero whether you beat him or lose is a rollercoaster that's hard to replicate. :story:
 
If we're talking Souls I'm gonna be a bit of a contrarian here but the one that comes to mind for me is Oceiros, mostly for the music and the narrative.
For other titles, I really enjoyed the Abstract Daddy from SH2 for the same reasons.
 
Giygas is extremely memorable. Weird looking, creepy, interesting fight, good music. It's got everything a good boss fight needs.

Robotnik is iconic, moreso than even Bowser imo, because you fight him repeatedly and he is always different and gets tougher each time.

Red from Pokemon Silver was the most epic boss fight, especially back as a kid. Blue and Silver are worth an honorable mention.
