I think the issue is that goblins are usually more of a problem for bumfuck nowhere villages who can't actually afford good help. While the rockeater is eating money and the mine owner has the cash to move some asses.It explains why no one wants to do it, it doesn't explain why it isn't better compensated or seen as more necessary. You'd think in a world where humanity and friends are constantly at war with everything the constant pervasive threat to the food supply and everyone's wife/mother/sisters would punch higher than it does. Hell, they even juxtapose Goblin Slayer single handedly saving a village from 20+ rapegoblins against a bunch of adventurer teams pooling resources to raid a gold mine because a not-purple worm and a bunch of slimes took up residence. The big worm that eats rocks in a gold mine is wildly ignorable as far as threats go, even if everyone goes for the higher paying job they should be self aware enough to see that what Goblin Slayer was doing was probably more useful in the big picture.
But mostly I think the author fucked up a little on how much of a threat he wanted these little rape machines to be. They have to be disgusting enough to earn GS' rage and dangerous enough to always be decent threat, but the story also wants them to be insignificant enough that people are willing to ignore them for other quests despite being horrid little monsters. It's a tricky balance. Still like it though
