The only two titles I'm aware of are Record of Lodoss War and the first Berserk adapation both of which I found wanting. Maybe you might appreciate them more than I did.
Yeah that one specific ova I remember as a kid laughing at it but now I don’t know what it was called.

Well, they're not wrong.

Petulant child having godlike power is always a fun genre?/ story.

The Twilight Zone was more horror-esque, but I like when the Godlike Entity likes its routine. It doesn’t want it’s ass kissed and to kill it’s enemies, it’s gonna get obsessed with zombies for a day or get obsessed with Italy for no real reason and make it’s crush Julius Caesar (it ends with the Senate).

I don’t get the point of complaing that character has faults. There was a short series on message board I went on back in 2009-ish about a racist investigator being hired to try to solve a murder mystery that he only took because his code of ethics over rode his racism. The inner monologue of a guy calling people niggers and feeling absolute disgust is great when juxtaposing his desire to see Justice.

GR Giant Robo was neat. I liked how it did it's own thing and didn't just retread the OVA or even the original manga.
The whole BFN situation was really cool! It was a pretty interesting and relevant path for the show to take, and it makes the show worth watching in my opinion.

I see it more as "your waifu is shit", especially as Haruhi was pushed hard back then. How the mighty have fallen.

Actually are there any anime from the 2000's that got worshipped as god tier besides FMA?

Guren Lagan, Monster (mid-tier, pushed because Evafags are in denial about the media they consume), and most adult swim shows.

Is Children of the Whales worth reading? And if so, should I watch the anime instead?

Magical Girl Lyrical Nanoha and Pretty Cure came out in the 2000s. Both of them were genre-defining anime, especially Pretty Cure. Especially Pretty Cure.

We're in the great age of the isekai now where there's an isekai for every possible situation. I wonder if 10 years from now we will look nostalgically back on the good isekai shows like Overlord.
No, because every single iseki is utter worthless shit*

*only applies to current ones.
Vision of Escaflowne is the tits

Just like any other thing, there are enjoyable current isekai titles (to one's liking) if you search well enough.

Any good animes that harken very strongly to the western fantasy genre. I remember this one ova where it's a bunch of girls in a dungeon and one pulls a switch and they fall to their deaths or something like that. I really don't watch a lot of tv or movies anymore so I just want some good ole fashioned kiwi recommends.
I believe you are talking about Ruin Explorers Fam & Ihrie or just Ruin Explorers.

Slayers is a solid, if not goofy, fantasy series. The Japanese take on fantasy . . .

I go like the armor design but most of it fits in this odd blend of European and Japanese culture that got repetitive at the end of the 1990s.

I refuse to say this next suggestion is great but try Ys OVA.

Konosuba is great
Rayearth curbstomps Escaflowne
Otherwise I agree with you
Rayearth is just isekai Sailor Moon, Escaflowne is much better.

But do note that Rayearth is included in the caveat about older isekis.
It's fine, I liked it well enough.

I don't know these at all but I'll say it with complete confidence: they're shit.

Could that be something from Goblin Slayer? I haven't seen or read any of it, but my understanding is teams of fantasy girl adventurers tend to suffer terrible fates in it.

Picked up a used #1 Negamai omnibus at a weeb store yesterday for $8 bucks. After getting thru two volumes out of the three... I like it lol. Not usually a Harem guy, but it gives me a lot of those early 2000's feels that I miss, from the tech to just the slang. It's refreshing reading a old series, even if it's a bit trashy.

And to think, the author is now a politician.
