The big idea

When Black diners get poorer service from wait staff and bartenders than white customers, it’s more likely because of racial bias than the well-documented fact that they tip less, according to a new survey I recently published.

To reach that conclusion, my colleague Gerald Nowak and I recruited over 700 mostly white full-service restaurant servers and bartenders to review a hypothetical dining scenario that randomly involved either white or Black customers. We then asked them to predict the tip that the table would leave, the likelihood that the table would exhibit undesirable dining behaviors and the quality of service they would likely provide the table.

We also asked participants to fill out a survey to learn how frequently they observed anti-Black expressions of bias in their workplaces and to elicit if they harbored their own prejudices toward African Americans.

Servers who either held prejudices toward African Americans, worked in a restaurant where racist remarks were frequently heard or both were significantly more likely to predict that the table with Black customers would not only tip them less but also display uncivil, demanding and dishonest behaviors. As a result, these servers also reported that they would give worse service to the Black table relative to the white one.

We found no evidence of racially disparate treatment except when one of those two conditions was present: server prejudice or racist workplace words and behaviors.

Why it matters

The link between bias and actual discrimination is widely assumed – but rarely documented– to be responsible for the mistreatment that Black Americans continue to experience while engaging in a host of routine activities.

Besides providing new evidence of this connection, our results also have important practical implications. Because surveys show that Black customers are less familiar than white people with the 15%-20% tipping norm, they do tend to tip less. Servers are thus thought to be economically motivated to give preferential service to white customers who they believe are more likely to reward their efforts.

In response, some have suggested that voluntary tipping be abolished or steps be taken to eliminate the Black-white tipping difference by increasing Black customers’ familiarity with tipping norms.

However, we did not find evidence of stereotyping and service discrimination in the absence of anti-Black bias, which suggests the solution to this problem is in addressing racial prejudices in the restaurant industry.

What still isn’t known

A drawback of our study is that we asked servers how they would think and behave under hypothetical, controlled and experimentally manipulated conditions. We can’t know for sure how this process would unfold when servers wait on actual white and Black customers. Doing so would be very challenging. And because our participants weren’t randomly selected, our ability to know how well they reflect the attitudes and workplaces of all servers and bartenders nationwide is limited.

Nonetheless, prior research has documented a relationship between what people say they would do under hypothetical conditions and what they actually do when confronted with similar situations, which gives us some confidence in the real-world application of our results.

What’s next

Right now, we’re examining racial discrimination on the other side of the table by studying restaurant customers’ tendency to discriminate against Black servers by tipping them less than white ones. By administering a survey experiment to over 2,000 restaurant customers across the nation, our ongoing research project aims to further document this form of consumer racial discrimination.

TL;DR Sure, blacks don't tip and treat servers like shit, but it's racism to not treat them the same as the table full of pleasant white people who leave $100 tip on the table.

Abusing service workers was the original flex move before BLM....... a way to lord power over stand-ins for your 'oppressors', who can't fight back.

It's why EVERY service industry person, as well as every cashier and building maintenance/security man HATES dealing with black people... the instant they feel they've got an ounce of power over perceived authority? They wreck the place and hide behind the race card when you try and call them on it.

IT'S A STEREOTYPE FOR A REASON. Because there's coin-flip odds it's GONNA HOLD TRUE.

Okay, but those endorsements are based on personal experience showing those "stereotypes" to be totally accurate. The entire leftist belief system is rooted in "don't believe your lying eyes."
But the article admits that black don't tip. i don't know how to characterize this liberal wank. "Do what i want" "

"Servers notice patterns and chase the higher possible pay." - The Article

The author is even nice enough to show that blacks don't tip as well and are more taxing on the server; but that's a shit thing to write, so better try to wrap the problem up,as racism.

Bros... how come people who deal with blacks all the time...... so often end up racist towards blacks.....?
Why is that?

"I keep going to the same place and I swear, my food tastes like cum."
We don't have to tip in Britain, it isn't compulsory. However, if I ever eat at the same decent restaurant or if I'm abroad eating at the same place, and I like it, I will tip, because I WANT TO not because I HAVE TO.

If I get a cum burger, its going back, I'm getting my money back and I won't go again. simples

I knew a server who tired so hard to get a good tip from a black couple. Free apps, free drinks, responsive and pleasant to any request. Oh you want a cup filled with boiling water to put your fresh out of the dishwasher silverware in? Let me get it for you right away. The section he was serving was empty except for this couple, it was a late night. Every "canadian" who he had served before left either nothing or like sub 5%. He didnt think it was his fault, but this time he would be sure. The couple were well dressed, clean, ordered big. Over $80 for dinner (steaks, shrimp, etc). After exemplary service, he handed them the check, and asked if they needed anything else. And then he waited.

His tip was $0.45.

He was now sure about the tipping and dining habits of "canadians" and prioritized literally anyone else in his section at all times. Its not racism, or at least not by the waitstaff. Its experience. He doesn't hate blacks, he is not particularly racist. Its just known that they do not tip and are a hassle to deal with. Everyone who has been a server in America knows this.

The whole no-tipping thing would seem like a self-fulfilling prophecy (I give shitty service under the assumption of getting a shitty tip and whaddayaknow, I get a shitty tip for my shitty service) if it wasn't for shit like this:

I'm sure there are some civilized blacks out there who are getting thoroughly shafted by the actions of their fellow niggers. At least you don't have to tip at a fast food joint.

I worked in a restaurant for about year when I was in college and the reason black people get poor service is because they're awful people. It's not just that they don't tip. It's that they're generally loud, rude, and obnoxious, and spending any time near them at all is a chore. They're deeply greedy entitled people who will try to get shit over on you, asking for extra this and extra that and expecting to get it for free. The author's premise here is putting effect before cause. This stuff isn't the result of racism, it's the kind of experience that instills racism in people.

As someone who works in a tip heavy job (pizza delivery) i can tell you, black people tend to tip alot less than other races.

I just deliver the food so they get no better service than anyone else lmao.

Yes it's raysism and not nightmares like 20 blacks wanting seating together then demanding the entire restaurants supply. I seriously doubt they don't know about tipping unless all that security footage of black patrons taking tip money is fake.

no the only way for someone to be racist is because they want to be racist. real life isn't racist so you can't reasonably come to be racist from experience. It's taught.

I worked as a cook in a truck stop diner when I was in college. The amount of times waitresses would come back and vent to me about shitty tips (and obnoxious, rude, demanding behavior) from blacks was astronomical. Blacks damn well know about tipping, they just don’t. I still recall one younger girl working as a waitress at that diner who came to me close to tears because she knocked herself out for a black family and they left her a single penny as a tip.

the only groups of people who were possibly worse to serve than blacks were the groups of old church people who pile in for breakfast every Sunday

It continues to just kill me that anyone who is around blacks for any period of time inevitably ends up hating them and the only possible answe can be "racism."

Really guys there's not another possible answer? Not one?
